Cracked chocolate Macaroons


Ingredients for 6 guests:
 
The cracked macaroons
6 egg whites, 50 gr (1/4 cup) of granulated sugar, 115 gr (1 1/5) cups) of almond powder, 35 gr (1 1/5 oz) of cocoa powder, 1 tbl.sp of all purpose flour, 150 gr ( 1 1/5 cup of icing powdered sugar)

The "ganache" (icing)
50 gr (1 4/5 oz) of dark chocolate, 4 tbl.sp of liquid cream, 15 gr (1/2 oz) of butter

Utensils
1 whisk, 1 bowl, 1 spoon, 1 sieve, 1 saucepan, 2 pockets, 1 kitchen scale, 1 spatula, 1 baking , baking paper

Recipe: turn your oven to 180
º C (350º F)

Step 1: the cracked macaroon

Sift the flour, icing sugar and cocoa powder. In a second bowl, whip the egg whites. Once they begin to harden, add the granulated sugar and continue to beat. You can use a food processor if you preferred. Your mixture (meringue) must be smooth and firm. Little by little add the cocoa mixture / almond powder. Mix with your spatula very slowly, turning the bottom well. Take a pocket, turn it and with the help of a spatula, fill it with your preparation. Cover your cooking plate with baking paper. Cut the tip of your pocket and make some 1-inch (3 cm) circlesSprinkle with icing sugar. ONLY FOR KIDS: request an adult to put your plate in the oven about 12 minutes

Step 2: chocolate ganache (icing)

Pour the chocolate and the liquid cream in a bowl then put the bowl three minutes in the microwave. Your chocolate should be melted. You can also put them in a saucepan over low heat, stirring all the time. Add the butter and mix. Take a pocket, turn it and with the help of a spatula, fill it with your preparation.

Step 3: assembly


Wait for the macaroons to cool then gently remove the baking paper, making sure not to break them. Return them. Cut the tip of your icing pocket and cover the center of your half macaroon with the chocolate icing.  Take the other half, repeat the step and close the macaroons.

Small cake trick: you can also garnish your macaroons with jams and fruit!
